Our Story
Table 8 Co-Operative
Table 8 Co-operative is founded with five members all of whom are from the Trinity Bight area — Penny Vivian-Penney, Rebecca Hiscock, Jill White, Carrie Hookey, and Olivia White. Together, they have over 40 years of experience of working in different roles at Two Whales. With expertise in different areas, a passion for being a part of their community, and a love for Two Whales Coffee Shop, they are looking forward to working together to grow Two Whales as a business and as a community asset.

A co-operative (co-op) is a type of business model owned and operated by its members, who actively participate in decision-making and share in the profits. Co-ops are built on the idea that businesses can be run for the benefit of their members and their communities, rather than for outside investors. This model creates a sense of shared responsibility and connection, where each member has a voice in how the co-op is run. Every member has equal voting rights (one member, one vote), ensuring that decisions are made collectively, regardless of the amount of capital invested.
Table 8 Co-operative is committed to these principles, working not only to grow a successful business but also to build a stronger, more connected community through shared values and collaboration.
- Create a memorable experience for our customers with our food, atmosphere and people.
- Provide financial stability and personal growth for our staff and contribute to the sustainable development of our community.
- Minimize the impact our business has upon the environment.
- Use locally sourced, fairly-traded and organically grown products whenever possible.
- Create a working environment that is safe, supportive and enjoyable.
- Support and create initiatives designed to benefit the local community.
- Increase access to the arts by providing opportunities for artists of all kinds in our spaces.
- Create a shared experience of learning for the benefit of all.
- Work together to promote the co-op model and support one another through networks and partnerships.
Become a Community Supporter
If you’re passionate about our mission and values, we invite you to become a Community Contributor. This is a unique opportunity to support Two Whales Co-operative in its early days—through a small donation or a loan, with terms that you choose.
While Two Whales Coffee Shop has been part of Trinity Bight as a social enterprise since 2009, we’re now entering a new chapter. As a newly formed co-op with new ownership, we’re essentially starting from scratch. Your support will help us manage the challenges that come with launching something new, while we explore fresh ideas and community-driven initiatives.
By contributing, you’re doing much more than keeping a local coffee shop running. You’re helping us provide competitive wages for local families and students starting their first summer jobs. You’re supporting sustainable, organic gardening and backing a democratic, collaborative business model right here in rural Newfoundland and Labrador. You’re investing in the next generation of local entrepreneurs and helping us uplift artists, crafters, and farmers across the Bonavista Peninsula.
We want to recognize and thank our Community Contributors at the end of the season in a special way. Your support, whether big or small, makes a real difference to our operations and growth. It keeps our doors open so we can continue making a positive impact in the place we call home.

Where Does Our Money Go?
Two Whales Coffee Shop is owned and operated by Table 8 Co-operative, which means we make decisions together, equally, and collaboratively about where our money goes. Here’s how it breaks down:
Our Team
Our team is the heart of everything we do. We’re committed to offering fair wages, team bonuses, and opportunities for growth—both personally and professionally. The success of our shop is thanks to the dedication and hard work of our incredible crew, and we’re proud to support them in meaningful and rewarding ways.
Food & Beverage Costs
We prioritize quality, organic, and fairly traded ingredients for everything we serve—from our espresso drinks to the delicious meals from our kitchen. We also love sourcing locally, foraging, and picking from our own garden, where we grow greens, herbs, and veggies in our greenhouse and vegetable gardens. Every meal is made with love and care, straight from the heart of our community.
Overhead Costs
This portion covers all the essential (but often overlooked) costs that keep the shop running—heat, light, insurance, and even the free public Wi-Fi we offer to our community. It’s those little things that help us stay open and accessible.
Growth
After covering our costs, the remaining 10% is reinvested into our business. We’re passionate about expanding our shop, repairing and maintaining our 100-year-old building, and continuing to improve our space. This portion helps us buy new equipment, train our team, and prepare for the upcoming season.
